Ok so that 2hr spin class almost killed me.  It was really boring.  Just pedaling pedaling pedaling.  More pedaling.  And it hurt.   And I got tired.  I ate a Luna bar halfway through.  Wish I’d had Shot Bloks, but Tim ate them all (men, omg.)  As I was eating it, I thought “this will give me stomach cramps” but I was hungry (even after a big breakfast) and my mouth and hands didn’t listen, I just ate it.  I didn’t get sick.  I was super wobbly when it got over and a little nauseous.  Drove home, downed a glass of Gatorade, and literally thought I would puke.  So I showered and lay down for two hours.  

Then I got up and ate a bowl of chili and felt better.  But I had nothing to munch on during Downton Abbey (I was catching up on episodes since Tim was napping,) so I broke into the giant heart chocolate box Tim got me for Valentine’s Day.  

Yeah.  There were four left this morning and now it’s empty…

Mmm, Spicy Chili!

Ingredients:

  • 2lbs. Ground Beef
  • 3 cans Rotel
  • 1 can Tomato Sauce
  • 2 cans low sodium red kidney beans
  • 2 cans low sodium white kidney beans
  • 1 can low sodium pinto beans
  • 1 can low sodium garbanzo beans
  • 2 cans light beer
  • 1 can beef broth
  • Garlic (fresh or Garlic Powder (I used refrigerated garlic from a jar)
  • Chili Powder(s) (I used regular from the store and Piri Piri from Cruelie)
  • Cayenne Pepper
  • Cajun Seasoning (basically more chili powder)
  • Crushed Red Pepper
  • Cumin
  • Hot Sauce (I used my own Fire In Your Hole (Mango Habanero) and Tortuga Hellfire)
  • 2 cinnamon sticks
  • Pinch of nutmeg
  • Pinch of sugar
  • Fritos
  • Shredded Cheddar Cheese
  • Sour Cream

Chili Ramblings:

You really can’t fuck up chili.  You just throw shit in a crock pot and leave it for a while, and it’s magically delicious in a few hours.  However, quality ingredients and a few tips I’ve learned over the years will certainly benefit any chili chef.  This recipe probably can’t be replicated, since you won’t be able to access the same ingredients (Cruelie’s Piri Piri chili powder, Tortuga Hellfire sauce, or my own Fire in Your Hole sauce (I don’t think I had a recipe… If I did, I can’t find it…))

So, some tips before I get into how I made this:

  1. Beer.  Always put beer in the crock pot.  Doesn’t matter what kind, just dump some in.
  2. Sugar.  It makes the ingredients blend together.  I always throw in a pinch or two.
  3. Cinnamon Stick.  It’s like chili chocolate.  I don’t know how, but cinnamon in chili is a fucking must.  Do it.  Trust me.  This was my first attempt using nutmeg as well.  I think it worked also, but it’s too soon to make a “tip” out of it.
  4. Beans.  Who says you have to use “chili” beans or even red kidney beans?  I always use them as a base, but include a variety.
  5. Beef.  Some argue to use ground chuck or other expensive beef.  Frankly: you won’t taste it with the other flavors.  Don’t waste your money.  If you want to waste money, get a more expensive beer and fancy spices. These will enhance your flavor better than expensive meat.
  6. Quality spices.  The things that make this chili fabulous are my Fire in Your Hole sauce and my Piri Piri Chili Powder.  There are fancy herb/spice shops you can get good, fresh spices at to include in your chili over the traditional store bought ones.  Invest in one for your chili!
  7. When you think you’ve put enough seasoning in…. double it.  😉  Kidding.  Sort of.  I didn’t give amounts of the spices I used, because it is always “to taste.”  But I dump a shit ton of seasoning in.

Directions: (You’ll put most of the seasonings into the meat while it cooks as well as the crock pot.  Everything except: cinnamon, sugar, and nutmeg only go into the crockpot.  Crushed red pepper and garlic only go into the meat.)

  1. Brown Ground Beef.
    • Season with: chili powder, cayenne pepper, onion powder, garlic, cajun seasoning, cumin, crushed red pepper, 1/2 can of beer.
    • Once beef is browned and beer has cooked off, add hot sauce(s) and cook another minute or so.  Remove from heat, toss into crockpot.
  2. Dump into crockpot:
    • beef
    • rotel
    • all the beans
    • tomato sauce
    • Season with: chili powders, cayenne pepper, onion powder, cajun seasoning, cumin, cinnamon stick(s), nutmeg, sugar.
    • the rest of the beer
    • beef broth
  3. Cook on low 6-8 hours.  If it’s watery, cook on high for a bit to boil off the liquids.
  4. Enjoy with fritos, cheese, and sour cream.

Getting my Grove Back

Thursday:  So much bad food.  Sushi Valentine’s Dinner.  Walked Reilly.  Push-ups, Situps.

Friday Food:

  • Egg Muffin
  • 2 Santiagos Burritos, one Mild, one Chorizo.  Some fruit.  Simply Orange Juice.
  • Chocolates and Samoas.
  • A shit ton of delicious pasta salad.  Chicken Salad on bread.  Water.
  • Dove Dark Chocolates.
  • 3 Cliff Shot Bloks
  • Chocolate Strawberry, Homemade delicious cherry chip sugar cookie.
  • Homemade Chili w/ fritos, sour cream, cheese, and a glass of wine.  (Recipe coming later today.  This was hands down the best chili I’ve ever had, and I do good work regardless, so.  Yeah.)

Friday Exercise:

  • 50 toe pushups
  • 25 leg lifts, 25 exercise ball cobras (I consulted Thunda yesterday, my “V-ups” are called leg lifts…)
  • Reilly Walk
  • Dr. Borman visit (this isn’t exercise, but it seems relevant to this column and how my body feels today.)
  • 1hr. Spin Class
  • 1hr. Off Skates Training
  • 45mins? Speed Skating Hell

Uber Alice seems really sweet.  So sweet, in fact, that when she lies to your face you believe her.  Like when she says Speed Skating won’t be hard, then tries to kill you with laps and intervals and tough drills from hell.  After Thunda’s Off Skates training.  I literally did almost puke.  I sat out twice.  I felt like a total baby.  My entire back was on fire.  It was probably because when she showed up I yelled at her for wearing shorts in the snow/cold weather.

Thunda Off Skates was Thunda Off Skates.  But I was expecting it.  So it wasn’t as awful.  I said about 40 minutes in that I might have to sit out for Speed Skating, I hurt so bad.  But then Alice said it wouldn’t be hard.  Lies.  We lifted Thunda’s sandbell over our heads and threw it as hard as we could into the floor.  That was gratifying.  “FUCK YOU EVERYTHING DIE FLOOR DIE!”  And we jogged a lot (death.)  And we sprinted, like running sprinted.  I hate running.  We did this in partners (mine was SheWho.)  I went first and started as if I were sprinting on my skates.  I was halfway across the room before I realized I’d even started, and then I almost fell over cuz I was going so fast.  And then I was all “yeah.  I’m fucking badass.”  Apparently I like sprinting.  (I like to do it at Spin Class, too. Even though it’s hard/hurts, I like to do it…)

Spin Class–funny.  Friday mornings are Kim Spin.  But when school’s out, she often has Bill sub.  I can only go when school’s out, so I went yesterday (no kids yesterday, didn’t have to be there til 8, and could be dripping sweat–I was, too.)  Bill was in there when I arrived all “you’re a glutton for these early morning classes.” Um.  No.  I’m not.  I go once every 6-8 weeks when I have a day off.  That’s all.  But Kim was running the class.  He got his sub days mixed up.  Bwaaaaaahahahahahahahahahahha.  Yes.  And as Kim was getting class started, he stood there all pathetic and whiny and said things like “you know, I had three cups of coffee…”  What do you want, Bill?  A pity teach?  Go home or get on a bike.  Geeze.  Anyway, so class was good.  I sweat A LOT.  Either b/c  I was sweating chocolate or b/b I haven’t been in a while.  Anyway, I decided it was time to get some clip in shoes, but they are not “in season” or whatever so Sports Authority isn’t carrying them (lame.)  I bought some online:  They are sweet.  They should be here Tuesday.  Yay.  (And my research prior to ordering included a text conversation w/ Misto–did you know she Spins several times a week, too?)

After Spin, on my way to work, I got a beautiful, orgasmically gratifying neck crack in.  Like C1-C… whatever the last one is.  C6?  Which was great.  Except I had my appointment with Dr. Borman scheduled, and since it cracked yesterday morning, it wouldn’t (and didn’t) when I saw him in the afternoon.  Couldn’t have happened three days ago.  Lame.  Anyway, got to my appointment and one of the first things he did was crack the upper part of my back.  When I get stressed, I get a huge knot in my right shoulder blade.  It was the size of a clementine for a while in like 2005.  It hasn’t been an issue lately, and wasn’t really yesterday, but it was definitely forming and that area was tight.  Anyway, he cracked that top part of my back and it was UH-MAZE-iNG.  OMG.  I was like “alright see you later.” Afterward because that was sooooo what I needed.  I stayed for the UltraSound massage, though.  And he fixed my elbow (it creaks when I do my pushups.)

Anyway, then, like a dumbass, I went to Off Skates/Speed Skates.  Oh well.  Oh, and Tim used all the Epsom Salt.  Boys!  Ugh!

Cake Pop Glory

Food: 1758

  • Turkey Sausage Muffin, Milk, Coffee, Sugar free Pumpkin Spice Creamer
  • Apple, Greek Yogurt w/ Nature Valley granola and fruit
  • Tim’s Chili, Sour Cream, Cheddar Cheese, Fritos, VitarRain Sport, three Cake Pops

  • Derby Practice

So I didn’t eat as much yesterday.  I think the protein in my breakfast kept me full through the morning, and then I was cognizant of the calories in my lunch.  Chili w/ fritos, sour cream, and cheddar cheese.  And three Cake Pops  (Colin’s mom sent Cake Pops as her Monday treat.  OMG.  Delicious.)  So I didn’t eat before practice, just carrots afterward.

Practice was meh.  Its a level-up week, so there were several girls new to Mondays.  Lots of standing around, and some basic drills.  I didn’t get much of a workout in.

Which really isn’t going to bode well for the four cake pops and 0 exercise I’m rocking today…  😦

In other news…  Blew and I are going to be Contenders Captains.  Yay!  And Rad Die…  … well.  *Blushes.*  Rad Die was asking me about my derby wife.  So I jokingly asked if that was a proposition, to which Die said “just wondering.”  So I told her all about my Feist E. One and… and…  and…  well Die said too bad and…  well then we talked some more and I asked if she was courting me and she said yes.  *BLUSHING PROFUSELY.*  o.m.g.  Don’t tell anyone.

Soo… needless to say I’m having a pretty good day.  😀
