Herb Dressing Dinner Pasta

I’ve decided to be cool and copy Rowdy with a Recipes category.  I’m adding that delicious pasta I made yesterday.

Dressing: Put all ingredients in a food processor and blend like a crazy person while doing the rain dance.

  • Olive Oil (1 cup)
  • Red Wine Vinegar (1/2 cup)
  • Lemon Juice (2 tbsp.)
  • Dijon Mustard (2 tbsp.)
  • Garlic (4 cloves)
  • Salt & Pepper
  • Fresh herbs (Basil, Sage, Oregano.  The more, the herbier. I used about 4 cups.)

Pasta: Toss ingredients together with dressing.  Feel free to vary the veggies.  I’m thinking asparagus would have been way more delicious than peas, but I didn’t have any in my freezer.  😛

  • 1 package cooked wheat spaghetti.  (I usually make this recipe with cheese tortellini… but not during TBT)
  • Cherry Tomatoes
  • Mushrooms
  • Peas

Lemon Pepper Chicken: Marinade chicken (at least 20 mins.) Grill, slice, and top pasta with chicken.  And fresh grated Parmesan Cheese.

  • Chicken Boobs
  • Zest of 1 Lemon
  • Juice of 1 Lemon
  • Vegetable Oil (just enough to coat chicken)
  • Fresh ground black pepper
  • Garlic (2 cloves)

    hahaha just noticed the chicken boobs on the ingredients list.
